MERINGUE MINT COOKIES 
2 egg whites
1/2 tsp. cream of tartar
Pinch of salt
3/4 c. sugar
1 (6 oz.) pkg. mint chocolate chips
Few drops green or red food coloring

Preheat oven to 375 degrees for at least 15 minutes. Line cookie sheets with aluminum foil. In a large mixing bowl, combine egg whites, cream of tartar and salt and beat until mixture peaks. Beat in sugar, a little at a time. Fold in chips and food coloring. Drop batter by teaspoonfuls onto lined sheets. Place cookies in heated oven, turn off heat and leave cookies in the oven for about 2 hours.
