BLACK WALNUT LOAF CAKE | |
4 c. fresh, peeled and diced apples 2 c. brown sugar, packed 1 1/2 c. black walnut pieces 3 c. flour 1/2 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. baking soda 1 c. vegetable oil 1 tsp. vanilla 2 well beaten eggs Mix apples, sugar, and walnuts in bowl and let stand for 1 hour. Stir often to allow mixture to make own juice. Add flour, cinnamon, salt and soda then add oil, vanilla and eggs and stir thoroughly. Stir by hand, not mixer. Pour batter into greased and floured tube or loaf pan. Bake at 350 degrees for 1 hour, then at 300 degrees for 15 minutes. Cool. Remove from pan. Serve with whipped cream as garnish. |
