GLEN'S FRIED RICE 
2 1/2 c. Minute Rice, cooked
4 to 5 green onions, diced
Salt, fresh ground pepper to taste
3 eggs, beaten
2 stalks celery, diced
2 to garlic cloves, chopped
1 tsp. pepperoni juice
Salad oil

Saute onion, celery and garlic until tender. Do not over do it. Add rice and 3 eggs. Add salt, pepper, and pepperoni. Stir constantly until flavors blend and eggs scramble (about 3 to 4 minutes).
