QUAIL AND RICE 
Flour the quail and fry in shortening. Use drippings from quail and cut up 1 onion and 1 cup long grain rice and brown in skillet. Put in baking dish with rice on bottom of pan. Cover with can chicken broth and water if needed. Bake 1 hour at 375 degrees oven add extra water if necessary for moist rice.

4 quail
1 c. rice
1 onion
1 can chicken broth
Salt and pepper to taste
