SALMON AND VEGETABLE PIE 
3 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
1 lb. can salmon
1 c. green peas (cooked)
1 c. diced carrots (cooked)
1 1/2 c. fluffy mashed potato
Melted butter
Paprika

Prepare white sauce with butter, flour, salt, pepper and milk (liquid from the can of salmon may replace some of the milk). trim skin and bones from salmon break into pieces.

In baking dish arrange layers of salmon, peas, carrots and white sauce alternately until all ingredients have been used. Mash and season the potato and pile on top of fish and vegetables, covering all.

Brush with melted butter, sprinkle with paprika. Bake until brown and thoroughly heated. Serves 6. (400 degrees for 35 minutes) Tossed salad and hot biscuits go well with this dish.
