TEXAS COUNTRY BEAN SOUP | |
2 qts. water 2 c. Texas Country Bean Soup Mix 2 lbs. ham, diced, divided 1 onion, chopped 2 cloves garlic, minced 1/2 tsp. salt 1 (16 oz.) can tomatoes, with juice, chopped 1 (16 oz.) can Rotel tomatoes 4 carrots, diced 2 ribs, celery, chopped Wash and soak beans overnight; drain Put beans into 2 quart water with 1 pound diced ham, onion, garlic and salt. Bring to a boil. Reduce heat and cover. Simmer 2-2 1/2 hours. Add remaining ingredients and simmer 30 minutes. Yields: 2 quarts. For change: Add chicken instead of ham and 1/2 cup red wine. |
