ALL BRAN MUFFINS | |
2 c. 100% Bran 1 1/4 c. skim milk 1 c. all-purpose flour 1/3 c. firmly packed light brown sugar 2 tsp. baking powder 1/2 tsp. baking soda 1/4 c. Fleischmann's butter, melted 1/4 c. Egg Beaters or 2 egg whites 1/2 c. chopped apple 1/2 c. seedless raisins Mix bran and milk; let stand 5 minutes. Blend flour, sugar, baking powder and soda. Set aside. Mix butter and egg into bran mixture. Stir in flour mixture just until blended. Stir in raisins and apples. Spoon batter into 12 greased 2 1/2 inch muffin pan cups. Bake at 400 for 18-20 minutes. Microwave: Fill 6 paper lined microwavable muffin pan cups 2/3 full. Microwave at high (100% power) for 2 - 2 1/2 minutes or until toothpick inserted comes out clean. I get 14 or 15 muffins out of a batch. The paper liners are smaller. |
