SKEWERED CHICKEN | |
2 whole chicken breasts (boneless) 8 green onions (or 1 lg.) 1 green pepper 1 clove garlic, crushed 1/2 c. soy sauce 1/2 c. dry sherry or white wine 1/8 c. beef broth 1/2 tsp. sugar 1 tsp. ginger Combine "last" 6 ingredients as a marinade; set aside. Skin chicken and cut into 1 inch cubes, cut onion into pieces, cut pepper into squares; place in marinade and leave for 1 to 2 hours before cooking. Thread meat, onions and peppers onto skewers. Broil in oven or over charcoal grill. Brush with marinade while cooking. Makes 4 servings. NOTE: This is a very tender meat and vegetable, will melt in your mouth. |
