SICILIAN MEAT LOAF 
2 eggs, beaten
3/4 c. soft bread crumbs
1/2 c. tomato juice
2 tbsp. snipped parsley
1/2 tsp. dried oregano, crushed
1/4 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
2 lb. lean ground beef
8 thin slices boiled ham
6 oz. (1 1/2 c.) Mozzarella cheese, shredded
3 slices Mozzarella cheese, halved diagonally

Combine eggs, crumbs, tomato juice, parsley, oregano, salt, pepper and garlic; add beef and mix well. On waxed paper or foil, pat meat to a 12x10 inch rectangle. Arrange ham on top of meat, leaving a small margin around edges. Sprinkle shredded cheese over ham.

Starting from short end, carefully roll up meat, using paper to lift. Seal edges and ends. Place roll, seam side down, in 9x13x2 inch baking pan. Bake at 350 degrees until done, 1 1/4 hours. (Center of roll will be pink due to ham.)

Place cheese wedges over top of roll; return to oven until cheese melts, about 5 minutes. Makes 8 servings.
