MARINATED TOMATOES 
3 lg. ripe tomatoes
1/3 c. olive oil
1/4 c. red wine vinegar
1 tsp. salt
1/4 tsp. pepper
1/2 garlic clove, crushed
1 tbsp. chopped fresh parsley or 1 tsp. dried
1 tbsp. chopped fresh basil or 1 tsp. dried
2 tbsp. chopped onion

Cut tomatoes into 1/2 inch thick slices. Arrange in a large shallow dish. Set aside. Combine remaining ingredients in a jar. Cover tightly and shake vigorously. Pour over tomato slices. Cover and marinate in refrigerator several hours. Makes 6 servings.
