CHOCOLATE CHIP CARROT CAKE 
1 1/2 c. all-purpose flour
3/4 c. sugar
1/2 c. packed light brown sugar
1 1/4 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 eggs
3/4 c. vegetable oil
1 1/2 tsp. vanilla
2 c. grated carrots
1 c. mini semi-sweet chocolate chips
1/2 c. chopped walnuts

Combine flour, sugar, brown sugar, baking soda, cinnamon and salt in a large mixing bowl. Beat eggs, oil and vanilla in a small mixing bowl; add to dry ingredients. Blend well. Stir in carrots, chips and walnuts. Pour into greased and floured 13x9 inch pan. Bake at 350 degrees for 35 to 40 minutes or until done. Cool completely; frost with cream cheese frosting. 1/4 c. butter, softened 2 c. confectioners' sugar 1 tsp. vanilla

Beat cream cheese and butter in small mixing bowl until smooth and well blended. Gradually add confectioners' sugar; stir in vanilla. Beat until smooth.
