QUICK 'N COOK TOMATO SAUCE 
3 c. peeled, seeded & coarsely chopped ripe tomatoes
1/3 c. minced scallions
1 clove garlic, mashed through a press
3 tbsp. minced fresh parsley
3/4 tsp. dried basil
1/2 c. chicken stock

Combine all ingredients in processor or blender and mix until well combined but still chunky.
