POTATO-CHEESE SOUP | |
1 c. boiling water 2 bouillon cubes 1 (9 oz.) pkg. frozen French fries 2 tsp. instant minced onion 3 c. milk 1 can condensed cream of celery soup 1/8 tsp. paprika 1/8 tsp. pepper 1 c. shredded Cheddar cheese In medium sized saucepan combine hot water, bouillon and French fries. Bring mixture to a boil over moderately low heat and simmer 5 minutes or until potatoes are quite soft. Remove from heat. Beat mixture until smooth. Add onion, milk, celery soup, paprika and pepper. Cook until just reaches boiling point. Add cheese and cook, stirring occasionally until cheese is melted. Serves 4-5. |
