THUMBPRINT COOKIES 
1/2 c. butter, softened
1 egg
1/2 tsp. vanilla
1 1/4 to 1 3/8 c. flour
1/2 c. finely chopped nuts
3 packets Equal brand sweetener
Jam or jelly

Beat together shortening, egg, vanilla, and enough flour so dough is no long sticky. Work in nuts. Chill until firm enough to shape. Roll into balls. Place on ungreased cookie sheet. Dip your thumb in flour. Press down firmly in the middle of each cookie. Bake about 15 minutes or until golden brown on the bottoms. Remove from oven. Sprinkle with Equal brand sweetener. Cool. Fill hollows with jam or jelly. Keep refrigerated. Makes about 15 cookie. Oven temperature should be at 350 degrees.
