ZUCCHINI PANCAKES 
1/3 c. Bisquick
1/4 c. grated Parmesan cheese
1/8 tsp. pepper
1 slightly beaten egg
2 c. shredded unpeeled zucchini (2 medium)
2 tbsp. butter

In mixing bowl, stir together Bisquick, cheese and pepper. Stir in egg until mix is just moist. Fold in zucchini. Cook "rounds" in skillet until brown.
