CARAMEL BREAD PUDDING 
4 c. milk
1/2 c. sugar (to caramelize)
2 c. stale bread crumbs
1 tsp. vanilla
2 eggs
1/2 c. sugar
1/4 tsp. salt
1/2 c. raisins

Put 1/2 cup sugar into small iron frying pan and heat slowly, stirring constantly to avoid sticking. When sugar is melted and golden brown in color, add 1/2 cup boiling water and heat until sugar is all dissolved. Pour this into milk which has been scalded in double boiler. Add bread crumbs and let soak 30 minutes.

Beat eggs slightly, add sugar, salt, vanilla and raisins. Add to first mixture, turn into a buttered baking dish and bake in a moderate oven at 350 degrees for 1 hour. Serve with hard sauce or whipped cream. Substitute 2 squares chocolate for 1/2 cup caramelized sugar.
