GNOCCHI 
4 c. flour
2 c. mashed potatoes
2 tbsp. grated Parmesan cheese
1 tsp. salt
2 eggs
1/4 c. milk

Mix flour, potatoes, cheese, salt and eggs. While doing this, add 1/4 cup milk. Roll into long strips and slice into 1-inch pieces. Roll in flour lightly, then press down with your thumb until it folds over. Store in plastic bags in freezer.

COOKING: Boil salted water, drop Gnocchi into boiling water until they float to the top, about 5-10 minutes.
