BAKED SCALLOPS IN BUTTER 
1 lb. fresh scallops, cut up
3 tbsp. chopped scallions
1 tbsp. chopped parsley
1/3 c. bread crumbs
2 tbsp. pine nuts
1 tbsp. lemon juice
12 tbsp. butter

Preheat oven to 500 degrees. Rinse and dry scallops. Work butter until soft. Add onions and all other ingredients. Place scallops in 6 to 8 small ovenproof dishes. Top with butter mixture. Place dishes on cookie sheet and bake for 10 minutes.
