DOUBLE BANANA PUDDING | |
1 c. sugar 2/3 c. all-purpose flour Dash of salt 7 eggs 4 c. milk 1 1/2 tsp. vanilla extract Box of vanilla wafers 6-8 lg. ripe bananas, sliced Combine 1 cup of sugar, flour and salt in top of double boiler. Mix 1 whole egg and 6 egg yolks with 4 cups of milk and add it to the flour and sugar. Whisk mixture until it is smooth. Cook uncovered over boiling water, stirring constantly until thickened. Remove from heat. Add vanilla. Spread small amount into a large bowl. Cover with layer of wafers and start stacking wafers on side of bowl, top this layer with layer of bananas. Pour about 1/3 of the custard over bananas. Continue to layer wafers, bananas and custard to make 3 layers, each ending with custard. Beat the remaining 6 egg whites and gradually add about 1/3 cup of sugar and beat until mixture forms stiff peaks. Put on top of pudding and cover entire pudding. Bake at 425 degrees until brown. |
