PEANUT AND SESAME BRITTLE | |
2 c. brown sugar 1/4 c. vinegar 1/8 c. water 1/4 c. peanut oil 1 c. shelled roasted peanuts 1/2 c. toasted sesame seeds Mix together sugar, vinegar, water and cook slowly until syrup is thick, about 45 minutes (265 degree F on candy thermometer). Test: drop a bit in cold water. Gather syrup with fingertips. It should form hard ball. Oil a 9 x 9 inch pan with peanut oil and sprinkle with peanuts and half the sesame seeds. Pour over this candy syrup. Sprinkle with remaining sesame seeds. Cut into desired lengths before candy cools completely. Yields 1 1/2 pounds. |
