MINI CHEESECAKES 
20 vanilla wafers
2 (8 oz.) pkgs. softened cream cheese
1/2 c. sugar
2 eggs
1 tsp. vanilla
Your choice of fruit filling as topping

Place vanilla wafers in bottom of cupcake papers. Cream sugar and cream cheese together; add eggs and mix well. Add vanilla. Spoon into papers (about 3/4 full). Bake at 325 degrees for 25 minutes. Cool. Add topping - enjoy!
