MUSHROOM CRUST QUICHE 
5 tbsp. butter, divided use
1/2 lb. mushrooms, coarsely chopped
1/2 c. finely crushed soda crackers
3/4 c. chopped green onions
2 c. shredded Monterey Jack cheese
1 c. creamed cottage cheese
3 eggs, lightly beaten
1/4 tsp. cayenne pepper
1/4 tsp. paprika

Preheat oven to 350 degrees. Lightly butter 9 inch pie plate. Melt 3 tablespoons butter in heavy medium skillet over medium heat. Add mushrooms (can be chopped in food processor) and stir until tender, about 4 minutes. Remove from heat. Stir in crushed crackers.
