CHICKEN PUFFS 
1 c. water
1 stick (1/2 c.) butter
1 c. flour
1/2 tsp. salt
4 med. eggs
1/2 c. shredded Swiss cheese

Boil water in a heavy saucepan. Add butter and remove from heat. After the butter is melted, add flour and salt. Mix well with whisk. Do not use electric mixer. Add 4 medium eggs, one at a time, mixing well with whisk after each addition. Add Swiss cheese.

Drop by 1/2 teaspoonfuls on an ungreased cookie sheet. Bake in a 400 degree oven for 10 to 12 minutes until puffs are golden brown.

Either pipe in filling of your choice with a pastry tube or cut tops off puffs, stuff with chicken salad, shrimp salad, or filling of your choice, then replace top. Makes about 80. Note: These freeze well.
