ITALIAN PIZZA 
1 pkg. active dry yeast
1 1/4 c. warm water
2 tbsp. cooking oil
1 tsp. salt
4 c. flour

SAUCE:

1 (6 oz.) can tomato paste
1/2 c. hot water
1 tsp. salt
1/8 tsp. pepper
1/2 tsp. oregano or basil
1 lb. Mozzarella cheese
Toppings of your choice

Dissolve yeast in warm water. Stir in oil and salt. Mix in flour. Knead on floured board until smooth and elastic, about 15 minutes. Place in greased bowl and brush with oil. Cover and let rise until double in bulk, about 2 hours. Knead lightly and divide into 2 parts. Roll into approximately 12 inch circles.

Place on greased pizza pans or cooky sheets. Dent here and there with fingertips and turn up edge. Brush with oil. Spread sauce over dough. Add toppings and cheese. Bake in hot oven (450 degrees) 15 minutes or until dough is brown and crisp.
