STUFFED FLOUNDER 
4 flounder fillets
2 tbsp. butter
1/3 c. diced celery
1 tbsp. minced onion
1/4 c. water
1 c. cornbread stuffing
2 slices bacon, partly cooked
1 c. scalded milk

Saute celery and onion in butter until soft; add 1/4 cup water and stuffing; toss. Place 1/4 of stuffing on each fillet. Roll up; fasten with toothpicks. Brush each roll with melted butter; salt and pepper. Place in greased baking dish; top each roll with 1/2 strip partly cooked bacon. Add 1 cup scalded milk. Bake uncovered in 500 degree oven 10 to 15 minutes. Sauce from baking dish may be served over fish.
