STUFFED ZUCCHINI 
1 lb. Jimmy Dean sausage
8-10 oz. Swiss cheese
1/4 c. finely chopped onion
2 med.-sized zucchini

Brown the sausage, and drain on paper towels. Grate the Swiss cheese, mix with the sausage and set aside. Cut zucchini in half lengthwise. Clean seeds out and scrape out the pulp with a spoon. Saute the onion and then add pulp. Continue to saute until the mixture is mushy.

Add the sausage and cheese. Once combined, if the mixture seems loose, add bread crumbs. Fill the zucchini back up and sprinkle with paprika. Bake at 350 degrees for about 40 minutes. Slice before serving.
