ONION RINGS 
2 sweet onions
2 eggs, separated
1 1/4 c. buttermilk
1 1/2 c. flour
1 tsp. salt
1 1/4 tsp. baking powder

Remove skins and slice onions 1/4 inch thick. Separate into rings. Beat egg yolks. Add buttermilk, oil and sift dry ingredients. Beat egg whites until stiff. Fold into buttermilk mixture. Dip onion rings into batter. Fry a few at a time in deep fat heated to 375 degrees. Drain on paper towels and sprinkle with salt.
