PARTY POTATOES AU GRATIN 
6 c. cubed cooked potatoes (about 4 lg. potatoes)
1 stick butter
1/4 c. sliced green onions
1/2 c. chopped green pepper
1/4 c. chopped pimento, undrained
4 c. milk
2 tsp. salt
1/4 tsp. pepper
1 tbsp. parsley flakes
1 tsp. paprika
6 tbsp. flour
1/2 lb. shredded sharp cheese

In melted butter saute onions, green pepper and pimentos about 1 minute. Add seasonings and flour. Blend in milk, stirring until thickened. Add potatoes and 1 cup cheese. Stir until cheese is melted. Pour into a 3 quart flat casserole. Spread remaining cheese on top. Bake in a 350 degree oven for 30 to 45 minutes or until bubbly. Makes 10 to 12 servings. Make ahead and refrigerate before baking. Freezes perfectly.
