PORK CHOP MEAL FOR TWO | |
2 (3/4 inch thick) pork chops 1 tbsp. oil 1/3 c. uncooked reg. rice 1 chicken bouillon cube 1 c. hot water 1/2 c. chopped apple 1 tbsp. butter, melted 1 tbsp. brown sugar 1/4 tsp. ground cinnamon 1 sm. apple, sliced Brown chops in hot oil, remove and drain on paper towels. Add onion and rice to drippings in skillet. Saute until onion is tender and rice golden brown, stirring constantly. Place bouillon cube in hot water to dissolve. Add to mixture in pan and bring to a boil. Stir in chopped apple. Pour into 10 x 6 x 2 inch glass baking dish. Arrange chops on top. Cover and bake at 325 degrees for 25 to 30 minutes. Combine butter, brown sugar and cinnamon. Brush apple slices with sugar mixture; arrange around chops. Bake uncovered an additional 20 minutes or until rice and apples are tender. |
