OLD FASHIONED BREAD PUDDING 
8 slices dry bread, crusts removed
3 egg whites, slightly beaten
1 pkg. coconut cream pudding (not instant)
1/2 c. applesauce
1/2 c. coconut
1 tsp. vanilla
1/4 stick soft butter
1 qt. Half and Half
Sprinkle of cinnamon
1/2 c. chopped nuts (pecans)
1 1/4 c. sugar

Pour 1/2 of the Half and Half on the broken up bread and refrigerate for about 1 hour. Then add all the ingredients except the sugar and nuts. Mix well (with mixer) with remainder of Half and Half. Stir in the sugar and nuts (pecans). Pour into a 13 x 9 inch pan and bake at 350 degrees for one hour.
