MEXICAN CHICKEN 
1 cut-up chicken in bite-size pieces
1 med. onion
Garlic powder to taste
Pepper to taste
Oil to saute onion
8 oz. sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 med. bag Doritos
1 can pitted olives, diced
8 oz. Cheddar cheese
8 oz. Monterey Jack cheese with jalapenos

If you can't find Jack cheese with jalapenos, substitute plain Jack cheese and 1 small can green chili peppers; saute with onions.

Saute onions in oil; remove from heat. Add undiluted soups and Jack cheese; cool. Add garlic, pepper, sour cream, chicken and olives; stir. Grease large pan. Layer with crushed Doritos, 1/2 chicken mixture, 1/2 Cheddar cheese. Repeat layers, ending with Cheddar cheese. Bake at 350 degrees for 45 minutes.
