MUSHROOM STRATA 
1/2 lb. fresh mushrooms
1/4 c. butter
6 slices of bread, remove crust
1/2 c. chopped onions
1/2 c. chopped celery
1/2 c. mayonnaise
1 tsp. salt
1/2 tsp. ground pepper
1/2 tsp. tarragon
2 eggs
1 c. Half & Half
1 c. shredded Cheddar cheese

Saute' mushrooms in 3 tablespoons of butter in frying pan for about 2 minutes. Cut bread into half inch cubes. Sprinkle half of cubes in the bottom of buttered 8 or 9 inch pan or 1 1/2 quart casserole. Pour mushrooms on bread. Add remaining 1 tablespoon butter to pan and saute onions and celery for 2 minutes (until tender). Top with second half of bread cubes mix mayonnaise, salt, pepper, tarragon, eggs and Half and Half. Soak well with egg mixture. Sprinkle with cheese. Cover and refrigerate for at least 2 hours. Bake 350 degrees for 55 minutes.
