3/4 c. butter (softened) 1 1/2 c. flour 1/2 c. finely chopped nuts (pecans or walnuts) 11 oz. cream cheese (softened) 1 1/2 c. confectioners' sugar 3 c. Cool Whip (lg. container) 1 pkg. lemon pie filling (cook `n serve pudding) Make cook `n serve pudding and allow to cool. Four Layer Assembly: 1. Mix butter, flour and nuts. Pat into greased 13 x 9 inch pan. Bake at 375 degrees for 15 minutes; cool. (Using a sandwich bag on your hand helps with this.) 2. Mix cream cheese, sugar and 1 1/2 cups Cool Whip. Beat until smooth. Put on cool crust. 3. Spread cool lemon pudding on top of cream cheese layer. 4. Top lemon filling with rest of Cool Whip in container. Sprinkle nuts on top. Refrigerate until served. |
