LIME CHEESECAKE 
CRUST:

1 c. shredded coconut
2 tbsp. flour
2 tbsp. butter

Combine coconut, flour and butter. Press into 9 inch springform pan. Bake at 350 degrees for 12-15 minutes.

1 env. Knox gelatin
1/4 c. cold water
3 egg whites, whipped
3 egg yolks
3/4 c. water
3/4 c. sugar
3-4 drops green coloring
8 oz. cream cheese
1/4 c. lime juice
1 tsp. grated lime peel
1 c. heavy whipping cream

Soften Knox gelatin in water. Combine egg yolks, water and sugar in saucepan. Heat 5 minutes. Add gelatin (Knox) mixture and stir to dissolve. Gradually add gelatin mixture to 8 ounce cream cheese softened; mix to blend. Add lime juice, rind and food coloring.

Beat egg whites and add 1 tablespoon sugar. j Beat whipping cream. Fold into gelatin mixture. Pour into baked crust. Chill until firm.
