PREMIUM CHUNK CHICKEN BREAST
WITH RICE
 
2 (5 oz.) cans Sweet Sue premium chunk chicken breast
1 (6 3/4 oz.) box long grain and wild rice
1/2 c. sun dried tomatoes, prepared
1 lg. ripe avocado, diced
3/4 c. dijon mustard vinaigrette dressing (recipe follows)
2 c. Sweet Sue chicken broth

Prepare rice according to package directions, substituting Sweet Sue chicken broth for the water. Drain the chicken and separate the chunks. Combine the chicken, prepared rice, tomatoes and avocado. Add the dijon mustard vinaigrette. Serve chilled or room temperature.

DIJON MUSTARD VINAIGRETTE:

1/4 c. white wine vinegar
1 tsp. salt
1 tbsp. dijon mustard
1/8 tsp. black pepper

Combine all ingredients except oil in container of electric blender, with blender running, gradually add the Canola Oil slow, steady stream, processing until mixture is smooth and slightly thickened.
