HOT AND SPICY MEATLOAF 
2 lbs. ground beef

SEASONING MIX:

1 bay leaf
1 tsp. cayenne pepper
1 tsp. black pepper
1/2 tsp. cumin
1/2 tsp. nutmeg

2 c. chopped (total) onions, celery, green peppers 1 tbsp. Worcestershire sauce 1/2 c. evaporated milk 1/2 c. ketchup 2 eggs, lightly beaten 1 c. bread crumbs

Combine seasonings in small bowl and set aside.

Saute vegetables in melted butter until they are soft; add seasoning mix, Worcestershire sauce and saute until mixture starts sticking. Add milk and ketchup; cook another few minutes. Remove from heat.

Combine the ground beef with remaining ingredients. Add the vegetable mixture; combine well.

Shape into loaf. Bake uncovered for 45 minutes to an hour at 350 degrees. Serves 6.
