SCRUMPTIOUS SQUID STRIPS 
1 squid
1/2 c. flour
1 1/2 c. dry bread crumbs
2 sm. eggs
1 tbsp. oil
1/2 tsp. salt
Good grind or shake of pepper
Oil and 1 tbsp. butter for deep frying

SAUCE:

3/4 c. mayonnaise (preferably made with lemon juice)
1/2 tsp. (or to taste) cayenne pepper
1 tbsp. tomato ketchup
1 tbsp. brandy (optional)

SAUCE: Combine all ingredients, serve cold.

Prepare squid, then cut hood and tentacles into strips. Toss in flour. Beat egg, salt and pepper and 1 tablespoon oil together. Dip squid in this mixture, then in the bread crumbs, leave to dry on a wire cake rack.

Heat enough oil to just cover the pieces of squid, add the butter. Deep fry the crumbed squid until crisp and golden, takes about 1 minute. Drain on absorbent paper. Serve hot or cold with the included sauce. Especially delicious as an entree or party dish. Serves 8 as an entree.
