MANDARIN ORANGE CAKE 
1 box Duncan Hines butter recipe cake mix
3/4 c. Crisco oil
3 eggs, add one at a time
2 (11 oz.) cans mandarin oranges

Mix the above ingredients (using one can of oranges, juice and all, the other can of oranges (drain). Pour into 3 round cake pans and bake at 350 degrees for 20-25 minutes.

FROSTING:

1 lg. can crushed pineapple, drained but not too well
1 lg. pkg. instant dry vanilla pudding
1 lg. can coconut (optional)
1 lg. size Cool Whip

Mix crushed pineapple and instant pudding well, about 3 minutes. Add coconut and fold in large size Cool Whip. Frost cake.

You will have plenty of frosting, so put plenty between each layer. Make a day ahead, it is more moist.
