MOCHA PUDDING CAKE 
3/4 c. sugar
1 c. sifted flour
2 tsp. baking powder
1/8 tsp. salt
1 square bitter chocolate
2 tbsp. butter
1/2 c. milk
1 tsp. vanilla
1/2 c. brown sugar
3/4 c. cold double strength coffee
4 tbsp. cocoa
1/2 c. sugar

In large bowl, sift together flour, 3/4 cup sugar, baking powder and salt. Melt chocolate and butter together, then add milk and vanilla. Add to flour mixture, mixing well. Pour into greased 8" or 9" square pan. Combine brown sugar, 1/2 cup sugar and cocoa together and sprinkle over batter. Pour coffee on top and bake in preheated 350 degree oven for 40 minutes. Serve warm with whipped cream, if desired. Serves 8 to 9.
