GREEN CHILI ENCHILADAS 
1 lb. ground beef
1 lg. onion, chopped
Cooking oil
1 (4 oz.) can chopped green chilies
1 lb. Cheddar cheese, grated
1 (10 oz.) can enchilada sauce
1/2 c. grated American cheese
1/2 c. chopped olives
Tortillas

Brown beef and onion in skillet using about 2 tablespoons cooking oil; cook until meat loses red color; add chilies and Cheddar cheese and heat until cheese is melted, stirring as needed.

Pour cooking oil about 1/4 inch deep in a small skillet. Soften tortillas one at a time. Tortillas must be pliable to roll. Spoon about 4 tablespoons. Meat mixture on each tortilla; roll up; arrange rolls in a deep baking dish that has been greased. Pour enchilada sauce over tortillas; sprinkle with American cheese. Bake in oven, preheated to 400 degree oven for about 10 minutes or until cheese is melted. Remove from oven and sprinkle with olives.
