BEST CHESS PIE | |
1 (9 inch) deep dish pie crust 1 1/2 c. sugar 1 tbsp. cornmeal 2 tbsp. plain flour 4 egg yolks 1 whole egg 1 stick butter 1 can Milnot 1 tsp. vanilla 1 tsp. white vinegar Mix sugar, cornmeal, flour, yolks and egg well. Add butter and Milnot. Blend. Add vanilla and vinegar. Mix well. Pour into crust (9 inch deep dish). Bake at 350 degrees for 50-60 minutes. MERINGUE: 4 egg whites 1/2 tsp. cream of tartar Pinch of salt 8 tbsp. sugar Use four whites left over from above pie. Beat whites until stiff. Slowly add 1/2 teaspoon cream of tartar, pinch of salt and 8 tablespoons of sugar. Beat until stiff. Cover and seal pie with meringue. Bake at 350-400 degrees until a very light brown. |
