BAKED CAULIFLOWER DOM | |
3 lbs. cauliflower (whole) 8 oz. yogurt, beaten Salt to taste 2 tsp. sugar 1 tbsp. onion powder 1 tbsp. ground ginger 3 tbsp. ground cashew nuts 1 tbsp. ground raisins 1 tbsp. ground green chilies 1 tsp. garam masala A few tomato slices and some green peas for garnishing 1/4 lb. butter oil Remove the main stem from the base of the cauliflower. Make small cuts at the base to ensure even cooking but leave the cauliflower whole. Wash and place cauliflower with yogurt, salt, sugar and 8 ounces water in a heavy saucepan. Cover tightly and simmer over medium heat until the cauliflower is almost cooked. Hat butter oil in a pan and add ground ingredients, garam masala and a little water. Fry for a few minutes. Put cauliflower in its sauce in a casserole and pour the fried ingredients over it. Bake in a moderately hot (300 degree) oven for 10 minutes. Turn the cauliflower over carefully; spoon some of the liquid in the casserole over it and continue baking until light brown. Remove from the oven and garnish with sliced tomatoes and peas before serving. Serve with paratha or bread. Serves 8. |
