CHICKEN FLAUTAS | |
1 c. finely chopped cooked chicken 1/3 c. picante sauce 2 tbsp. finely chopped green onions 1/4 tsp. cumin 1 c. grated Jack or Cheddar cheese 16 sm. corn tortillas Mix first 5 ingredients. Pour 1/2 oil in small skillet. Heat until hot "not smoking". Quickly fry tortillas about 2 seconds each side. Drain well on paper towels. Put 1 tablespoon of mixture down the center of each tortilla. Roll tightly and secure with a wooden toothpick. Place seam down on baking sheet. Bake at 400 degrees for 18-20 minutes. Serve warm with guacamole or picante sauce. |
