CUCUMBER SALAD 
3 lg. cucumbers
1 green pepper, sliced
1 onion, sliced
4 stalks celery, sliced or chopped
1 c. tomato, cut into bite-sized pieces
1 pt. sour cream
Salt to taste
1/4 to 1/2 c. vinegar
Sprinkle of pepper

Pare and slice cucumbers. Sprinkle with salt and let stand for 30 minutes. Drain off water that has accumulated. Mix sour cream and vinegar well; coat cucumbers with sour cream and vinegar. Add onion, celery, and green pepper. Sprinkle with pepper. Add tomatoes before serving. If crisp cucumbers are preferred, omit the 30 minute waiting time. May be fixed ahead of time and is better if chilled.
