GREEN BEAN, WALNUT, AND FETA
SALAD
 
1 1/2 lb. green beans, trimmed and cut in half
3/4 c. olive oil
1/2 c. packed fresh mint leaves, finely chopped
1/4 c. white wine vinegar
1 tsp. salt
1/2 tsp. minced garlic
1/4 tsp. freshly ground pepper
1 c. chopped toasted walnuts
1 c. diced red onion
1 c. crumbled feta cheese or Parmesan, grated

Bring 4 quarts salted water to boil over medium heat. Add beans and cook 4 minutes. Drain and plunge into ice water. Drain and pat dry when cool. Combine oil, mint, vinegar, salt, garlic and pepper in processor and blend. Arrange beans in a shallow dish, sprinkle with nuts, onion, and cheese. Pour dressing over the beans and toss thoroughly. Serves 6-8.
