EASY COCONUT PIE 
1 (9 inch) unbaked pie shell
1 stick butter
1 c. sugar (or fructose)
3 eggs
1 c. unsweetened coconut (sweetened if preferred)
1 tsp. vanilla
1 tbsp. apple cider vinegar

Cream butter and fructose (or sugar); add eggs and beat well. Add remaining ingredients and pour into pie shell. Bake 45 minutes at 325 degrees.

Preparation time: 50 minutes. Yield: 1 (9 inch) pie; 6-8 servings.
