MEDITERANEAN CHICKEN 
1 lb. chicken breasts -or- chicken thighs
1 small can black olives
1 jar roasted red peppers
1 can mushrooms (or use fresh)
1 box frozen artichoke hearts -or- 2 cans canned artichokes
1 package sun-dried tomatoes
1 1/2 cups Ken's Italian marinade dressing or Caesar dressing

Place all ingredients into slow cooker and simmer for at least 6 hours. If you don't have a slow cooker, use a large pan and simmer for at least 2 hours.
