BAKED MACARONI AND SAUSAGE 
1 lb. Italian sausage, hot or sweet
1 green pepper, chopped
1 onion, chopped
1 lg. can Italian plum tomatoes, keep juice and chop tomatoes
2 c. water
1 (6 oz.) can tomato paste
1 lb. elbow macaroni, cooked
1 lb. Mozzarella cheese, shredded
1/2 c. grated Parmesan cheese

Remove sausage from casing, crumble and fry until brown. Add green pepper and onion and saute for 5 minutes. Stir in tomatoes (with juice), water, and paste. Simmer covered for 15 minutes. Season to taste. In a 9 x 13 x 2 inch pan layer macaroni and cheese, ending with macaroni. Pour sauce over and sprinkle with cheese. Bake at 400 degrees for 30 minutes.
