CHERRY COCONUT COOKIES 
3/4 c. sugar
2/3 c. butter Crisco
1 egg
1 tsp. grated lemon peel
3/4 tsp. almond extract
1/2 tsp. salt
1 3/4 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 c. flake coconut
1/2 c. chopped pecans
1/3 c. quartered maraschino cherries, well drained on paper towel

Heat oven to 350 degrees. Combine sugar, butter, egg, peel, extract, salt in large bowl, beat until well blended. Combine flour, baking powder, baking soda. Add at low speed. Stir in coconut, nuts and cherries with spoon. Shape 1 inch balls. Place 2 inches apart on ungreased baking sheet. Bake 11-12 minutes. Makes 3 1/3 dozen.
