FRENCH PEPPER STEAK
1 round steak, cut in 4-5 serving portions
Meat tenderizer
2 tbsp. peppercorns
1 tbsp. salt

SAUCE:

2 tbsp. each ketchup, mustard, Worcestershire sauce and butter
1-2 oz. cheap brandy, warmed

Put salt in frying pan; heat to high. Tenderize steak. Crush peppercorns in cloth napkin with hammer. Press broken peppercorns into both sides of streak. Throw in hot pan. Cook to your preference.

Now heat sauce; put everything but brandy in small pan. Arrange cooked meat on platter; pour sauce over all. Then flambe'. Have brandy in tin pan, light it, gently pour or spoon over platter. This is a super quick, inexpensive, easy and impressive main dish. Great for company. The elegance makes a little bit of meat go a long way.
